Pork pancetta with potatoes

- We cut the potatoes and we put them in a casserole to bowl for about 15 minutes. After they are done, we place them in a baking pan.
- We prepare the marinade for our Pork pancetta by adding in a bowl olive oil, fresh thyme, a bit of orange juice and pepper. We mix them well and then we pour the mix on the pork pancetta pieces we have placed on a dish. Then we put the pork pieces on the grill for 15 minutes.
- At the same time we prepare our sauce, adding a few big rockets, parmesan cheese, vinegar and olive oil and blend them well together so they create a velvety-looking sauce.
- When the pork pancetta is done we place it on a plate and we add the potatoes and the sauce on the side.
