Lamb souvlaki-fillet

- We chop the lamb fillet in small pieces and place them in a bowl.
- Then we prepare our marinade using fresh thyme, lemon juice, a bit of olive oil, a glass of red wine and a bit of pepper. We blend them together and then we coat the lamb fillet pieces with the mix.
- We put the lamb fillet souvlaki on the grill for about 20 minutes.
- While waiting for the meat to be done, we prepare our signature puree that will complete the dish. To make the puree we use eggplant, a bit of garlic, yoghurt, tahini, lemon juice, olive oil, salt and pepper.
- When the lamb souvlaki fillet is ready we place it delicately on a plate, add a good portion of our puree and… voila! Your delicious lamb souvlaki fillet is ready to be savoured!
