Spinach, rocket, grapes and haloumi

Haloumi is a Cypriot semi-hard, unripened brined cheese made from a mixture of goat’s and sheep’s milk and sometimes also cow’s milk. It has a high melting point and so can easily be grilled.

- First we cut the haloumi cheese in small pieces and grill them for 5 minutes on each side.
- Then we cut the spinach and rockets and place them on the plate.
- We start preparing our vinaigrette by mixing in a bowl the ingredients: a bit of honey, olive oil, lemon juice, garlic and some fennel seeds.
- When the haloumi is grilled we place it on the plate, above the spinach and rockets, we add the vinaigrette and add some grapes on top.
