- We heat the oil and butter in a pan and fry some onions in medium heat for 5 minutes.
- Then, we add the rice and stir for a few minutes.
- Now we make our herb salad mix adding some olive oil, some chopped rockets, fresh thyme, marjoram, a bit of lemon juice and a bit of oregano.
- We give the risotto a final stir and add the herb mix.
- When cooked, we place risotto on a plate, season it with salt and pepper and top it with parmesan, mascarpone and prosciutto.
