- First, we melt the chocolate (bitter 70%) in a boiler and let it cool.
- Then we put the chocolate in another bowl adding egg yolk and cream, whisking the ingredients until they are smooth.
- In another bowl we put egg white and add a bit of sugar, whisking until the ingredients are blended together nicely.
- Then we mix the two above mixtures together until they create a mousse. We pour the mousse into glasses and put them in the fridge for a few hours.
- At the same time we make our delicious honey with lime sauce to top the mousse. In a bowl we blend honey, syrup, lime juice.
- We take the mousse out of the fridge, place in on a serving plate, add a large portion of vanilla ice cream and top both the mousse and the ice cream with our honey with lime sauce!
