Dark chocolate soufflé

One of the most popular desserts in Skopelos restaurants is the Chocolate soufflé.

Its chocolate consistence is the main reason for its popularity yet this delight is also everybody’s favourite for being a light sweet choice.

It can be found in many different and exciting versions but there is one key fact that all local chefs share. They use double dose of chocolate so the soufflé gets an extra juicy texture.   • First, we preheat the oven.
  • We use one tablespoon of butter to grease the ramekins and then we coat them with cocoa.
  • In a bowl over a pan of shimmering water we melt the dark chocolate, espresso coffee and some extra butter while stirring constantly.
  • We remove the mixture from the heat and add vanilla. Then we whisk the yolks and after that we set the mixture aside.
  • In another bowl we beat the egg whites with some sugar, salt and cream.
  • Then, we gently fold the egg-white mixture into the chocolate and spoon into the ramekins.
  • We cover the mixture with a plastic wrap and put it into the fridge.
  • After a few hours we take it out of the fridge, and bake it for about 35 minutes until the mixture is puffed.
  • We place it on a serving plate with a homemade sauce of our choice.
