Fava beans have a distinct flavor and creamy texture creating a great taste that can be added to a wide variety of dishes.

Fava beans were eaten in ancient Greece and Rome thus it is understandable why fava recipes are so popular in contemporary Mediterranean cuisine. Specifically in Skopelos island you will often find the locals enjoying it at lunch with a glass of wine or ouzo!

See the steps we take to create delicious fava and enjoy a new delicious taste during your holidays to Skopelos.

  • First of all we clean the fava beans with cold water.
  • Then we boil water in a large casserole and then we put the fava in.
  • We cover the casserole and boil in medium heat for about 30 minutes.
  • In another casserole we mix olive oil, a few onions, garlic and some carrots.
  • After the fava has boiled, we throw in the onions and continue to cook in medium heat for 15 minutes. We whisk often while adding a bit of salt and pepper.
  • After the fava is cooked we place it on a plate and add fresh parsley and some extra olive oil if needed.
