  • First, we place agrill pan over medium-high heat.
  • We cut zucchinis, peppers, mushrooms, eggplants in small slices.
  • Then, we brush the vegetables (zucchinis, peppers, mushrooms, eggplants) with 1/4 cup of extra virgin olive oil and add some salt and pepper.
  • We grill the vegetables until tender –without shifting them too frequently- and until their colour gets darker –it takes about 7-10 minutes.
  • While the vegetables are getting cooked, we make our signature sauce – a must for the high Mediterranean temperatures. We mix together katiki cheese, yoghurt, thyme, brown sugar and some salt and pepper.
  • We add the sauce on the platter and then we add the vegetables on top after they are cooked. The dish is served warm.

One thing you need to know about the grilled vegetables recipe is that you should to be careful with the amount of olive oil you add. Since this is a filling dish, select a sauce that is light and refreshing –everything made with Greek yoghurt is perfect. So when visiting a local restaurant during your Skopelos holidays do not forget to ask for yoghurt sauce!
