Penne with zucchini

  • We boil the penne for about 7 minutes.
  • At the same time, we prepare our zucchini pesto. In a mixer we add zucchinis, parmesan cheese, extra virgin olive oil, 1 clove of garlic, lemon juice, parsley and mint, until we are presented with a velvety sauce.
  • Then we add the mix to a pan adding a few sun dried tomatoes and mizithra cheese, and fry for a couple of minutes.
  • When the penne is done, we place them on a serving plate, add the zucchini mix and on top season with fresh pepper.
